The Easiest Quinoa Recipe

This is my go to weekly meal because it is so easy! It is delicious, healthy and so quick to make…I promise! I prep this on Sunday’s and have a bit for either lunch or dinner several days a week.

If you have a Trader Joe’s near you then that is where I get almost all of my food for this recipe.

*I have two recipes below. One is for people shopping at Trader Joe’s and the other is for people that are shopping elsewhere as they will have different products available.

Asian Stir Fry Quinoa (Trader Joes’s version) 

Serving Size: 6 people

Ingredients: 

  • 2 containers Asian Stir Fry Mix
  • 2 cups Tricolor Organic Quinoa (4 cups water in with it to boil)
  • 1 cup Coconut Aminos

Optional:

  • 1-2 tablespoons crunchy peanut butter
  • 3 cloves diced garlic

Directions:

  1. Start to cook the quinoa (For a serving size of 6: do 2 cups Quinoa with 4 cups water). Put all ingredients in a pot and boil. Once it starts to boil, put a lid on it and turn the heat down to simmer.
  2. Once you have the quinoa started cooking, put both containers of the Asian Stir fry mix in a wok with your 1 cup of coconut aminos. If you want to add the garlic and peanut butter, do that now. Turn the heat on low, place a lid on and let cook together until soft.
  3. When the vegetables and quinoa are both done combine them all in the wok and it is ready to serve!

 

Asian Stir Fry Quinoa (non Trader Joe’s version)

Serving size: 6 people

Ingredients:

  • 1 white onion chopped
  • 1 green bell pepper chopped
  • 1 red bell pepper chopped
  • 1 can bamboo shoots
  • 3 medium carrots chopped
  • 1 small head of broccoli chopped
  • 1 cup snow peas whole
  • Organic Quinoa
  • Coconut Aminos

Optional:

  • 1-2 tablespoons crunchy peanut butter
  • 3 cloves diced garlic

Directions:

  1. Start to cook the quinoa (For a serving size of 6: do 2 cups quinoa with 4 cups water). Follow the directions on your quinoa packet on how to cook.
  2. Once you have the quinoa started cooking, put the vegetable mix in a wok with your 1 cup coconut aminos. If you want to add the garlic and peanut butter, do that now. Turn the heat on low, place a lid on and let cook until soft.
  3. When the vegetables and quinoa are both done combine them all in the wok together and it is ready to serve!
